Iranian Date Fruit Cake


  • 3 cups pittedِِ dates
  • 1 cup walnuts, coarsely chopped
  • Dough
  • 1 cup unsalted butter
  • 1⁄2 cup all-purpose flour, sifted
  • 1⁄2 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1⁄2 teaspoon ground cardamom
  • 1 cup unsalted pistachios, ground OR 1 cup coconut, shredded


You will also need:

  • A flat, 9 inch serving dish
  • A large, deep skillet



  • Toast the walnuts in a skillet over a medium heat for 5 minutes, then set aside to cool.
  • Place a few walnut pieces inside each date. Arrange the ِِdates packed next to each other in the serving dish
  • In a large deep skillet, sauté flour in butter over a high heat, stirring constantly for about 15 to 20 minutes, and toasting until it is golden caramel color
  • Spread hot dough over dates, then pack and smooth the cake with back of a spoon
  • Combine cinnamon, sugar and cardamom and sprinkle evenly over the cake, then sprinkle all over with the ground pistachios or shredded coconut all over and allow to cool
  • Cut into small square pieces and arrange on a serving platter or on the plate in which it was made
